Cheesy Chili Relleno Squares 🧀
🔥 Why You’ll Love It
This dish is bold, comforting, and incredibly easy to make. The combination of mature Cheddar and Red Leicester creates a gooey, rich texture with a gorgeous golden top when baked. It’s exactly the kind of cheesy pull everyone wants. The green chillies give it that signature Relleno heat and kick, without being too overpowering (especially when deseeded). It’s family-friendly, crowd-pleasing, and packed with flavour in every bite.
What makes it extra special is its simplicity, no need to stuff individual peppers like traditional Chile Rellenos. You just mix, pour, and bake. It’s perfect for busy mums, weekend brunches, or even as a spicy side dish. Plus, it’s gluten-light (only one spoon of flour!), high in protein, and bursting with that melty, peppery goodness.
