Peanut Butter Oat Bars 🍯

Why it works:
No-bake, portable, and energy-rich. Great for snack emergencies or quick lunchbox filler.
Ingredients (makes 12 bars)
2 Cups rolled oats
½ Cup peanut butter (or any nut butter)
⅓ Cup honey or maple syrup
2 Tbsp ground flaxseed
1 Tsp vanilla extract
Optional: ¼ cup dark chocolate chips or dried cranberries

Method
Mix base: In a large bowl, stir the dry ingredients – oats and flaxseed.
Combine the wet: Warm peanut butter and honey gently until pourable. Mix in the vanilla.
Stir: Add the wet ingredients to the oat mix, stir until combined.
Fold in the chocolate chips or cranberries.
Press: Line a small baking pan with parchment, press mixture firmly.
Chill: Refrigerate the mixture until firm for at least 2 hours.
Shape: Slice into squares.
