Ingredients (makes ~12 cookies)

⅔ cup whole wheat flour or spelt flour

⅓ cup ground flaxseed

½ tsp baking powder

½ tsp cinnamon (optional)

⅓ cup coconut oil, melted (or softened butter)

⅓ cup honey or maple syrup

1 large egg

1 tsp vanilla extract

½ cup chocolate chips or dried fruit (optional)
Instructions

Preheat & prep: to 180 °C (350 °F) and line a baking tray with parchment.

Combine dry ingredients: oats, flour, flax, baking powder, and cinnamon in a bowl.

Mix wet ingredients: whisk together coconut oil, honey, egg, and vanilla in a second bowl.

Stir together: fold the wet mixture into the dry until just combined, then gently add chocolate chips or fruit.

Shape & bake: scoop tablespoon-sized balls onto the tray, flatten slightly, and bake for 10–12 minutes until golden.
